Maraboo is literally a dream come true
Vicky, a wine taster involved with taste ever since she remembers herself and always looking for deliciously flavourful connections, fantasised about creating a small, humane, natural ice cream shop.
One day she flew to Rome, rent a flat, stayed for a while and learned how to make ice cream from scratch in a family owned gelateria next to a fabulous teacher and gelato master, Federica. There, she studied all about “Gelato Artigianale” as Italians call it, with only good things inside.
And then, Maraboo happened. Its name came from the poetry collection of Nikos Kavvadias for whom sea and travels were a source of inspiration. Igor joined shortly after, bringing along his exotic cooking expertise, his ability to execute their recipes with skill and passion and his love for sports and bicycles.
They both like to experiment with any crazy, rare materia prima they can think of, but at the same time honor the basic ingredients of their ice cream, such as milk, fresh fruit, organic cocoa. Together they make you lose your mind in flavor, crafting small batch, inspirational ice cream so natural and healthy.

Our philosophy
What our philosophy is
- We make everything from scratch, no ready-made bases or premixes.
- We use Pozzetti, a tradional method of storing ice cream so that it remains perfectly tempered and fresh.
- We do create our own recipes and only our own recipes, using the least possible amount of top quality sugar and the least amount of ingredients.
- We aim at bringing out flavour with finesse and for our ice cream to taste exactly like what it is.
- We create smooth and lovely texture as texture is a part of taste.
- We want our ice cream to be characterful and distinct.
- We source our ingredients from small producers after meticulous research.
- We respect the environment so we are in a complicated relationship with plastic.
We don’t love it and we avoid it as much as possible. - The ingredients we use tell a story together. Our fruit is fresh, often organic and we always follow seasonality. No strawberry sorbet in November, no pomegranate sorbet in August.
- We use the best quality cow’s milk from small farms in Volos and sometimes experiment with goat’s milk as well.
